Stephen has worked in and managed a great variety of hotel and independent restaurants and also has contract catering experience. His forte is using Scotland’s wonderful, natural produce to create stimulating dishes.

Stephen is also Head Chef for Heights rooftop restaurant in the Grassmarket, with stunning Castle views and for Agua, the new restaurant at Apex City Hotel www.apexhotels.co.uk.

For Metro brasserie, however, Stephen creates menu’s that reflect the cool design and interiors but which adhere to the principles of fuss free food.
