metro intro
from a bare concrete shell in edinburgh´s grassmarket has emerged metro, a classically contemporary restaurant, café and cocktail bar over three levels. opened on monday 10th july 2000, metro reflects the way people now choose to eat and drink.

metro restaurant
metro´s menu aims to get away from the traditional three-course avenue still favoured by most restaurants.
diners can still opt for this of course, but can equally combine dishes in a way and at a size that suits their taste and appetite. all but the metro giant crème brûlée can be enjoyed in either small or large versions. how such dishes are mixed is up to each diner.
metro´s wine and drinks list represents old and new world influences to complement the world of dishes on the menu.

metro bar
reminiscent of the classic cocktail bars of the 1930´s, metro bar intends to bring the concept right up to date.
continuing the simplified dining of the restaurant, metro´s bar offers two different classics every month, such as seafood and champagne, nachos and beer or sushi and ..., in combinations for up to four or eight people.
soups, sandwiches and salads from the main restaurant menu are also available

metro online
metro´s website isn´t just a collection of menus and nice pictures. reservations can be made online with a confirmation back within half an hour. there is also the facility for diners to submit a review of their visit to sit alongside those from other diners and press reviews.

metro design
newly established ian springford architects were commissioned to create metro from a bare concrete shell. from space occupied in a previous incarnation by lecture theatres has emerged a classically contemporary restaurant, café and cocktail bar over three levels. the architects looked to the great cafés of new york and vienna at the turn of the twentieth century for inspiration as to how different spaces could work together. their aim was for metro to capture some of the confidence and style of these grand establishments, while creating an environment, which would be at the same time memorable and enjoyable.

the three lines of the metro logo reflects metro´s three levels; the restaurant on the lower ground floor, a café style area and “metro to go” facility on a new pavement level and a cocktail bar on the upper mezzanine level overlooking the space. each area is connected by stairs at each end, which offer spectacular views onto the activity below and to edinburgh castle and the old town beyond.

natural materials are used simply and generously throughout the restaurant; dark blue welsh slate for floors, rich red merbau timber for the ceiling, walls and floors. the timber floor is wrapped up the walls and seating to contain the restaurant. the illuminated wood ceiling provides a rich warm glowing plane suspended above.

restaurant and café chairs have been imported from italy, while the bar sofas and armchairs are upholstered in scottish leather. the dark cranberry tabletops add a bold dash of vibrant colour. all aspects of the design have been carefully considered to create a unified feel from the choice of plates through to staff uniforms .
