In his own words

Having been brought up in a very large Italian family from my papa`s side & Irish family from my mothers side every mealtime was a catering event. The love for fine food & drink was instilled at an early age so becoming a Chef became a natural choice of career.

A couple of years of full-time college studies gaining general professional City & Guilds qualifications included a stint in France. After college I cut my teeth working in the immensely busy west end of London theatre land at Bentleys of Piccadilly cooking for many actors & celebrities such as the Rolling Stones, Sir John Gielguid & even Dame Edna Everidge were regulars. Then began working up the ladder in the Kensington Close Hotel from where I was transferred to Bermuda & went on to live & travel the Caribbean for four & a half years in luxury hotels.

I went back to London for a couple of years to the Hotel Russell in Bloomsbury, which hosted many politicians & dignitaries including Princess Anne. Then spent a couple of years in Spain as Head Chef of the prestigious La Reserva de Marbella hotel & restaurant complex.
Now enjoying life with my family in Edinburgh & working as Head Chef at the newly opened Metro West End restaurant in the Apex European Hotel.
